Pumpkin Seeds and Friends by Stewart Kerrigan

Ingredients:

  • 1 Cup pumpkin seeds

  • 3-4 Tbsp Miso Tamari, or any light miso

  • 2 Tbsp chia seeds, ground

  • 1/4 Cup Ao Nori Flakes

  • finely chopped green olives (opt)

Directions:

  1. Soak the pumpkin seeds for a few hours or overnight in salty water.

  2. Drain and rinse lightly, then place in a pot and cover with fresh water.

  3. Bring to a boil, then simmer for a few minutes, adding miso at the end.

  4. Pour the mixture into a blender, and (carefully) blend at high speed until smooth,
    adding more water as needed.
